Bulletin - Winter 2009 Week 4

Dear Readers: Let me present you with another addition of the Thoughtful Foods Bulletin.  My little intro will be kept to a minimum as I'm putting this together between cooking dinner and unpacking bags.  So much for time management etc.  Lucky there is enough real reading in the body of the bulletin to keep you busy!

News
Garden Co-ordinator - Fernanda
From Cassie
Fernanda, the driving force behind our regeneration of the co-op garden, has now become the official Garden Co-ordinator (we're going to give her a badge* and everything). This means we will now have a more co-ordinated (see what I did there?) approach to the garden, including managing the soil erosion problem and giving volunteers a regular time to get involved in the garden. Check the bulletin in the coming weeks for more information!

New Plants for the Garden
From Cassie
As part of the garden regeneration Fernanda is proposing to plant some bamboo as it would thrive in our garden and the stems would possibly be harvested. The bamboo would be clumping/native bamboo, not the running bamboo that quickly becomes a weed! She is also planning on putting in some taro plants and some ivy to cover the ground near the windows (to deter littering).

Oh Honey!
From Cassie
The co-op needs more honey jars, and more volunteers to jar the honey! So if you have jars or time to donate, swing by the co-op some Thursday and pitch in! Otherwise there'll be no honey for your porridge in the morning.

No Yoga in July
Tyler is going away for all of July, which means that our usual free yoga classes will not be held until he returns on Thursday August 6 at 2pm.  Thanks for all your work, Tyler, and have a great break!
Scrap Material Seeking New Home/Use
From Cassie
Near the old compost pile there's a bunch of scrap material (planks of wood, chicken wire, etc) that's dying to become part of your next art project, tree house or rocket ship.  If you would like to give it a good home, come by and pick it up whenever you like. First in best dressed.
Cleaning Bee
From Cassie
There will be a mid-year cleaning bee on Saturday 11 July from 10am to 4pm. Come by and help us get organised for second semester! Hours spent getting dirty for the co-op are volunteer hours! And, of course, there will be snack-sized sustenance provided. More information on how to get involved to come but if you'd like to express your interest in helping out email either Cassie (cassiemurphy@gmail.com) or Andrew (mcnicolandrew@gmail.com).

Twitter
From Andrew
I've just created a Twitter account for Thoughtful Foods.  For all those Twitterate people out there, you can read updates at https://twitter.com/thoughtfulfoods.  It may be a while before we work out how best (if at all) to use this service but feel free to follow us and make suggestions.  Email info@thoughtfulfoods.org.au (or talk to Andrew) if there's anything you want to put on there or if you have any ideas!

The End is Pie!
From Andrew
An packing mistake on Thursday morning proved applecalyptic for our boxes last week.  This wasn't so bad, as most people love apples to thinly sliced pieces.  But if you're strapped for ideas on what to do with your applebundance of apples, why not make a nice pie?  The weather is perfect for it and your taste buds will applepreciate it!
Ok, I'll quit making lame puns and get to the core of this bulletin notice. *snicker*
Here is one juicy recipe from the Post Punk Kitchen website (http://www.theppk.com/recipes/dbrecipes/index.php?RecipeID=67), but, of course, feel free to use your own.  (If you're not morally opposed to using raisins or other berries in cooking, like Cassie is, then I highly recommend adding a handful to the mix!)
Cinnamon Apple Crisp
Prep time: 15 minutes | Cooking time: 1 hour | Makes 8 -12 servings
Equipment: Two Mixing Bowls, 9 x 13 Baking Dish (glass is best), Aluminum Foil

Filling ingredients:
(Roughly) 8 apples, peeled, cored, quartered and cut in 1/4 inch slices
juice of 1/2 a lemon
1 tablespoon arrowroot powder (corn or potato starch would be an ok substitution)
2 teaspoons cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon allspice
tiny pinch cloves (about 1/16 teaspoon)
1/2 cup pure maple syrup
Topping Ingredients:
1 1/2 cups rolled oats
1/3 cup all purpouse flour
1 teaspoon cinnamon
1/8 teaspoon salt
2 tablespoons canola oil
2 tablespoons pure maple syrup
1 teaspoons vanilla
Directions
Preheat oven to 180. In a large bowl squeeze lemon juice over sliced apples. Add the arrow root and spices making sure all apples are coated. Move apple mixture to the baking dish and drizzle the maple syrup over it. Cover with tin foil and bake for 35 minutes.
Meanwhile prepare the topping. Sift dry ingredients together, and in a separate bowl, mix wet ingredients well. Fold wet into dry mixing with a fork as you go along, until well coated and crumbly.
When apples are done baking, remove from oven and toss, then flatten them evenly with the back of a spatula or wooden spoon. Sprinkle the topping evenly over the apple mixture and bake uncovered for 25-30 minutes, until top feels crispy. Serve warm with vanilla ice cream.
