Rich vegan banana icecream

In times of banana surplus, why not blend some bananas with coconut cream, add cinnamon and/or agave and/or wattle seed to taste and freeze.  Ok so it's good without the coconut cream too, but for a special occasion when you want it extra creamy and exotic-tasting.  It comes out with a better consistency if you re-blend it after an hour or so in the freezer, although it's not at all disagreeable if you couldn't be bothered.

Ingredients


2 bananas
2 eggs (optional - add 1/4 cup water)
1/2 cup vegetable oil
1 cup brown sugar
1 1/4 cup flour
1 teaspoon baking soda
Dash of salt
Walnut pieces/choc chips (optional)
Butter

Method


1. Preheat oven to 350 degrees F

2. Mash bananas, whisk eggs and mix with oil and sugar

3. Sift dry ingredients (flour, soda and salt) together.

4. Fold together dry and wet ingredients.

5. Butter pan, pour in the mixture

6. Bake for one hour, let cool for 10 minutes.
