Ingredients:

Below are the quantities of vegetables I use. You need about 9 bunches of herbs/lettuces for this recipe:

Delish noodle salad

Ingredients


1 packet cooked noodles
1/2 Chinese cabbage, shredded
3 shallots, chopped
fresh coriander, chopped
1 packet slivered almonds

Dressing
sugar
olive oil
white vinegar
soy sauce
sweet chilli sauce

Method


1. Heat dressing - 2 parts oil to 1 part vinegar and 1 part sugar - until sugar dissolves. You will need less than a cup. Add a splash of soy and sweet chilli.

2. Toast almonds in frying pan on low heat - try not to burn.

3. Mix all the goodness up in a big bowl and enjoy.

Bulgar salad

Ingredients


  • 4 cups cooked bulgur
  • 1/4 cup chopped red cabbage, blanched 1 - 2 minutes
  • 1/2 cup green string beans, sliced and blanched 2 - 3 minutes
  • 1/2 cup carrots, diced ad blanched 1 -2 minutes
  • 1/4 cup yellow summer squash, sliced in half and then into thin half-moons and blanched 1 - 2 minutes
  • 1 tablespoon. Tamari-roasted sunflower seeds
  • Umeboshi - Parsley Dressing

Method

  1. Place all ingredients except the dressing in a mixing bowl and mix thoroughly.
  2. Just before serving add the dressing and mix again.
