Ingredients
(serves 4)
- 220g (1 cup) sugar
- 80mls (1/3 cup) water
- 2 tbs fresh lemon juice
- 6 new season's apples (like Jonathon)
- 200g soft or silken tofu
- 2 tbs honey
Method
- Combine the sugar and 60mls (1/4 cup) of the water in a small saucepan and stir over low heat until sugar dissolves. Bring to the boil and boil, without stirring, for 5-7 minutes or until the syrup is golden. Immediately remove from heat and carefully add the remaining 1 tbs water and the lemon juice (the mixture will sizzle and spit). Stir over low heat until smooth.
- Peel, core and slice the apples. Add to the caramel and bring to the boil over medium heat. Remove from heat.
- To make the tofu cream, process tofu and honey together in a food processor until mixture is smooth and creamy Serve tofu cream with the warm or cooled caramelised apples.
