Caramelised apples with tofu cream

Ingredients

(serves 4)

  • 220g (1 cup) sugar
  • 80mls (1/3 cup) water
  • 2 tbs fresh lemon juice
  • 6 new season's apples (like Jonathon)
Tofu Cream:
  • 200g soft or silken tofu
  • 2 tbs honey

Method

  1. Combine the sugar and 60mls (1/4 cup) of the water in a small saucepan and stir over low heat until sugar dissolves. Bring to the boil and boil, without stirring, for 5-7 minutes or until the syrup is golden. Immediately remove from heat and carefully add the remaining 1 tbs water and the lemon juice (the mixture will sizzle and spit). Stir over low heat until smooth.
  2. Peel, core and slice the apples. Add to the caramel and bring to the boil over medium heat. Remove from heat.
  3. To make the tofu cream, process tofu and honey together in a food processor until mixture is smooth and creamy Serve tofu cream with the warm or cooled caramelised apples.
