Ingredients
Burger patties:
- 1 cup cold mashed potato
- 1 tin lentils (the french brown ones are best)
- 1 tbs mild indian curry paste (i have tried thai and it isn't as good)
- 4 spring onions, finely sliced
- 1 egg
- 1/2 cup dry breadcrumbs
Sauce:
- 1/2 cup low fat yoghurt
- 1/4 cup lemon juice
- 1-2 tbs tahini (you can skip this if you don't happen to have it handy)
To assemble:
- Salad ingredients (eg lettuce, tomato, shoots, grated carrot)
- Burger buns or wraps (tortilla wraps work well too)
Method
- make the dressing first: stir together all the ingredients and season with salt and pepper to taste
- to make the patties: mix together all the ingredients in a large bowl and bring together with your hands. Form into large patties for burgers, or felafel-sized patties if using for wraps
- pan-fry the patties for 2-3 mins each side, or bake at 200 degrees for 10 mins each side
- assemble with salad ingredients in your roll/wrap with the dressing
I have done this as a simple activity dinner - setting out all the ingredients on the table and each person makes their own salad and wrap with the hot patties. I prefer the wraps myself as the pattie/bread ratio is better!
