Vegan jelly

6 cups water
4 teaspoons agar agar powder
1 cup sugar
3-4 drops rose essence
1/2 teaspoon vanilla essence
3-4 drops almond essence
Green and red food colouring

  • Pour water into a saucepan, sprinkle the agar-agar powder over the surface and bring slowly to the boil.
  • Boil until agar-agar dissolves, 5-10 minutes.
  • Add sugar and stir over heat until it dissolves.
  • Remove from heat, pour 2 cups of the jelly into a bowl, color pink with red coloring and flavour with rose essence.
  • Pour into a glass bowl rinsed with cold water.
  • Keep remaining jelly warm in a pan of hot water.
  • Refrigerate pink jelly.
  • As soon as the first layer sets (this takes only a few minutes), pour 2 cups agar mixture into the bowl and flavour with vanilla.
  • Pour gently over the first layer and chill.
  • Repeat with remaining jelly, colour pale green and flavour with almond essence.
  • Chill before serving.
  • If you don't have a fridge, agar jelly will set at around 27oC (80oF).

 

Alternatively you can replace the water with fruit juice and reduce the sugar.
